3 easy recipes to use up bananas

  1. Nice cream. Freeze pre-sliced, ripe bananas. Whizz up in a blender with a squirt of lemon juice and a dash of vanilla extract, until smooth and creamy.
  2. Chicken korma. Chop onion, ginger and garlic, fry for 2 mins. Add korma paste, fry for 3 mins. Add diced banana, handful ground almonds, chopped chicken breasts and stock pot. Simmer for 10 mins until chicken is cooked.
  3. Vegan pancakes. Whizz up 2 bananas, 2 tbsp sunflower oil and 200g self raising flour in a blender. Add in 800 ml nut milk. Fry a tablespoon of batter at a time until set on one side. Flip.
