Rae’s ribollita

olive oil

75g smoked higher-welfare pancetta

1 pinch of dried red chilli flakes

1 teaspoon fennel seeds

1 large carrot

2 sticks of celery

1 large red onion

½ a bunch of fresh rosemary

1 x 400g tin of quality plum tomatoes

1 x 660g jar of quality cannellini beans

400g cavolo nero

400g stale bread

cold-pressed extra virgin olive oil

  1. Heat 2 tablespoons of olive oil in a large pan over a medium heat, finely chop and add the pancetta, chilli flakes and fennel seeds, then fry for 3 minutes.
  2. Meanwhile, dice the carrot and celery into 1cm chunks, and peel finely chop the onion. Tie the rosemary sprigs together with string.
  3. Add the chopped veg and rosemary to the pan, then reduce the heat to low and cook gently for 15 to 20 minutes, or until softened and caramelised.
  4. Tip in the tomatoes, squashing and crushing them through your clean hands, followed by the beans (juice and all), and 1.8 litres of water. Bring to the boil, then turn down and simmer for 30 minutes, or until the veg is tender and the liquid has thickened slightly.
  5. Meanwhile, strip the cavolo nero leaves from their stalks and roughly chop them, adding them to the pan after 10 minutes.
  6. When the veg is tender, pick out and discard the rosemary.
  7. Tear the bread into small chunks, dot it into the pan, and continue to simmer gently for around 10 minutes, or until the bread has broken down and the soup is thick and creamy, stirring regularly.
  8. Season to perfection with sea salt and black pepper, then drizzle lightly with cold-pressed extra virgin olive oil before serving.

Gluten-free one-cup pancakes

Gluten-free one-cup pancakes

1 large free-range egg

1 heaped cup of gluten-free self-raising flour (250g)

1 cup of milk (300ml)

olive oil

  1. Crack 1 large egg into a large mixing bowl then add 1 heaped cup of gluten-free self-raising flour (250g), 1 cup of milk (300ml) and a tiny pinch of sea salt.
  2. Whisk everything together until you have a lovely smooth batter.
  3. Drizzle ½ a tablespoon of olive oil into a large non-stick frying pan over a medium heat, carefully tilting the pan to spread the oil out evenly.
  4. Add a few ladles of batter to the pan, leaving space between each one so they have room to spread out slightly – each ladleful will make one pancake, and you’ll need to work in batches.
  5. Cook for 1 to 2 minutes, or until little bubbles appear on the surface and the bases are golden, then carefully flip them over.
  6. When the pancakes are golden on both sides, remove to a plate. Repeat with the remaining batter, adding a little more olive oil to the pan between batches, if needed.
  7. Serve the pancakes while they’re still hot, with your favourite toppings.

Sweet potato & chickpea curry

Sweet potato & chickpea curry

160g frozen leaf spinach

½ a mug of basmati rice (150g)

1 onion

4cm piece of ginger

2 cloves of garlic

2 tablespoons tomato purée

1 heaped teaspoon curry powder

vegetable oil

1 green chilli

1 small sweet potato (200g)

1 x 400g tin of chickpeas

2 tablespoons natural yoghurt

  1. Take the spinach out of the freezer and place on a plate to start defrosting.
  2. Place the rice in a 2-litre microwave-proof dish or bowl with 1 mug of water (300ml) and a pinch of sea salt and cover the bowl with a lid or a side plate. Cook in the microwave on a medium heat (400-500W) for 8 to 10 minutes (depending on the strength of your microwave), then remove and leave to steam with the lid on.
  3. Meanwhile, peel the onion, ginger and garlic. Place a box grater in a microwave-proof dish and grate the onion and ginger on the coarse side, followed by the garlic on the fine side.
  4. Add the tomato purée to the dish, along with the curry powder, a pinch of sea salt and 1 tablespoon of vegetable oil, and stir everything together. Prick the green chilli and sweet potato with a sharp knife, then add both to the dish and cover with a plate or lid. Set the microwave to high (800W) and cook for 10 minutes.
  5. Carefully lift the dish out of the microwave and uncover. Using tongs, remove the sweet potato, place on your board and slice into 3cm chunks, then stir back into the bowl. Add the chickpeas (juice and all), along with the frozen spinach, stir together, then cover and cook in the microwave on a high heat (800W) for another 10 minutes.
  6. Carefully lift the dish out of the microwave, uncover and stir everything together, breaking up the spinach with your spoon. Carefully taste (it will be hot), season to perfection with salt and black pepper, then stir in the yoghurt.
  7. Remove the chilli to your board, finely slice and stir back into the curry for added heat, to your taste, then fork up the rice, to serve.

Sweet potato chilli

Sweet potato chilli

Ingredients

6 sweet potatoes (250g each)

olive oil

1 teaspoon cumin seeds

1 x 95g jar of chipotle chilli paste

500g fresh or frozen chopped mixed onion, carrot & celery

½ a bunch of coriander (15g)

3 x 400g tins of black beans

3 x 400g tins of plum tomatoes

60g feta cheese

Method

  1. Preheat the oven to 180°C/350°F/gas 4. Put a large deep casserole pan on a medium-high heat. Peel the sweet potatoes, placing them in the pan as you go. Add 1 tablespoon of olive oil and fry for 5 minutes, turning occasionally, until starting to get golden.
  2. Push to one side, add the cumin, let it sizzle, then spoon in the jar of chipotle chilli paste and add 2 jars’ worth of water. Tip in the chopped mixed veg, finely chop and add the coriander stalks, reserving the leaves, then bake for 1 hour.
  3. Remove from the oven and add the beans, juice and all, then the tomatoes, scrunching them in through clean hands, along with 1 tin’s worth of water.
  4. Stir well, then roast for another hour, or until the sweet potatoes are tender.
  5. Season to perfection, then – if enjoying straight away – crumble over the feta and tear over the coriander leaves, to serve. Enjoy as is, batching up extra portions to stash in the fridge or freezer for future meals.

STEPS TO MORE MINDFUL TRAVEL

When planning your next holiday there is always so much to do. Tickets, flights, itineraries, packing, etc. can very easily overwhelm the experience of adventure and wanderlust. We often choose the “easier” accommodation or perceived bucket list activity to be ticked off, but what was once a common and well-sought out itinerary for your parents most likely isn’t as woke or mindful as it could be.

With social media being a current source of travel content and inspiration, what might look impressive in a story (a selfie with a tiger) can often create more harm and ultimately a ripple effect (when you post someone else will do it etc). Yes, embrace the beauty, culture, and spirit of travel, but by shifting your perspective to one of mindfulness, you will have all the benefits of ensuring your imprint is creating a positive impact. Jordan Ashley, Founder of Souljourn Yoga, shares her top 5 tips to more mindful travel.

Downsize

Choose places that are locally owned (as opposed to a huge chain hotel) to ensure that you are contributing to the local economy. Any kind of ethical or green policies that your accommodation have is always a plus.

Buy local

Anything that you get at home, you can purchase in your destination as well. This goes back to supporting the local economy by purchasing bug spray, shampoo, sunblock, etc. that can easily be found at a local market or pharmacy. Your business goes a long way, so pack light and donate what you don’t use.

Do your research

Have the intention of why you are doing a certain activity and do your due diligence before any kind of volunteer work. Unfortunately, orphanage tourism exists and pretend animal sanctuaries that are actually roadside zoos are common. If you are going to engage with any kind of philanthropic work, make sure you do a ton of research beforehand. One pointer is making sure that the NGO does background checks which is usually a good indicator that their hearts are in the right place. What might take a few extra hours of internet scrolling will ultimately lead you to being a more compassionate traveller.

Always ask

Don’t take people’s pictures without their permission. What might look like a really cool shot and seemingly harmless action, but it can be offensive. So simply, ask.

Be kind

Most likely, there will be hiccups on your adventures and having a “go with the flow attitude” means practising patience, compassion, and gratitude to be the ultimate global citizen.

How a hair transplant can give you permanent, natural-looking results

If you’re looking for a permanent solution to your hair loss, you may want to consider a hair transplant

Hair transplant surgery allows the surgeon to move healthy hairs on your scalp to areas with thinning hair.

Today, it’s possible to have natural-looking results thanks to one key advance. Most surgeons now transplant the healthy hairs a few at a time. This eliminates the unnatural doll-like hair that patients saw in the 70s and 80s. Back then, sections of hair called hair plugs were placed in the thinning area. In time, the hair plugs became quite noticeable.

Improvements in creating the hairline and placing the hairs in the thinning areas also help create natural-looking results.

Thanks to these advances, the results can look so natural that a barber or stylist cannot tell you’ve had anything done.

Results depend largely on the surgeon you select

While these advances are giving patients natural-looking results, the outcome still depends largely on the surgeon you select. You want to choose a doctor who understands hair loss and performs hair transplants regularly.

Dermatologists specialize in conditions that affect our skin, hair, and nails, so they know a lot about hair loss. Many also perform hair transplants and can tell you whether you are a good candidate for a hair transplant.

Who is a good candidate for a hair transplant?

Man with receding hairline
Are you a man in your 20s, who is experiencing hair loss? For best results, you may be asked to wait to have a hair transplant and start treating with a hair loss medicine.

Men and women of all races can be good candidates for a hair transplant.

To be considered for a hair transplant, you need two things:

  1. Enough healthy hair on your scalp that can be transplanted to the area that needs hair
  2. The ability to grow hair on the thinning area of your scalp

During a consultation with a dermatologist, you can find out if you have both. A dermatologist will give you a thorough scalp exam.

To find out why you have hair loss, you may also need a blood test. This can check for things going on in your body that may be causing your hair loss. Some patients need a procedure called a scalp biopsy. Your dermatologist can quickly and easily take what is needed for the scalp biopsy during the consultation.

If the exam and tests show that you are a good candidate for a hair transplant, your dermatologist can tell you what results you can expect. A full head of hair may be unrealistic, but a fuller head of hair can be the goal.

What happens during a hair transplant?

You can expect a hair transplant to take between four and eight hours. If you are having a large amount of hair transplanted, you may need to return for a few hours the next day.

Most patients remain awake during the entire surgery and need only an anesthesia that makes the scalp numb. Some patients also take a mild sedative to help them relax.

Hair transplant surgery
Hair transplant surgery usually lasts between 4 and 8 hours.

The surgery begins with your dermatologist removing the healthy hairs. To give you natural-looking results, your dermatologist may remove the healthy hairs by either cutting a strip of skin with healthy hairs from your scalp or removing individual hairs.

The second option takes a lot more time, but avoids leaving a long, narrow scar on your scalp. This can be beneficial if you prefer close-shaven haircuts like buzz cuts.

Before the surgeon can transplant the hairs, technicians need to prep the removed hairs and the surgeon must get your scalp ready for the transplant.

Depending on the number of hairs to be transplanted, two to three members of the hair transplant team may help place the healthy hairs into the area that needs hair. Once all the hairs have been transplanted, your scalp will be bandaged and you will be given instructions for at-home care.

When do patients see results from a hair transplant?

Most patients see results between six and nine months after surgery. For some patients, it takes 12 months.

It’s important to know that between two and eight weeks after the surgery, the transplanted hair will fall out. This is normal. By the third month, the hair may look thinner than before you had the transplant. Again, this is normal.

Medicine can help you keep the results

To get the best results from a hair transplant, your dermatologist may recommend medicine that treats hair loss. Medicine helps because hair loss and thinning can continue, even after a hair transplant.

Medicine can prevent or slow down new hair loss and thinning. By doing that, you can keep your natural-looking results for years to come.
